Welcome to the Christmas edition of tasty Tuesday. I will be sharing dessert recipes that my family begs to be served through the holiday season. Christmas is about traditions and baking for my family is one tradition I love. My extended family always enjoyed this recipe from my mom. This is a great recipe for a cookie exchange due to the amount of cookies it produces.
Mom’s Fruitcake Cookies
1 cup melted butter or margarine
3 eggs
1 teaspoon baking soda
1/2 cup milk
6 slices candied pineapple, finely chopped
1 cup candied red cherries, finely chopped
1 cup candied green cherries, finely chopped
1 cup brown sugar, firmly packed
3 cups all-purpose flour
1 teaspoon ground cinnamon
2 tablespoons cream sherry (optional)
2 cups dates, chopped
1 – 15oz package of white raisins
1 cups nuts, chopped
Combine butter and sugar, mix well. Add eggs, and beat well. Combine dry ingredients; add to butter mixture alternating with milk, mixing well after each addition. Stir in sherry, if desired. Add fruit and nuts to dough, mixing well. Drop dough bu heaping teaspoons onto greased cookie sheets. Bake in preheated 300 degree oven about 20 minutes.
Recipe Yields: about 16 dozen
Yes, you read that right 16 dozen cookies. If you do not like fruitcake you WILL love these cookies.
