Monterey Jack Chicken
Ingredients:
1 lb boneless, skinless, chicken breast, cut in strips
2 tablespoons extra virgin olive oil
Season salt
8 oz mushrooms, cut
1/2 onion, chopped
2 tablespoons jalapeno pepper jelly
1/4 teaspoon liquid smoke
8 oz Colby Monterey Jack cheese, shredded
Preheat large frying pan, slice chicken into strips and chop the onion.
Pour oil in pan and swirl around to coat. Add the chicken sprinkle with season salt to your liking, cook til no longer pink. Tranfer to a dish. In the large frying pan cook the mushrooms and onion for 3 minutes or until tender. Add the jelly and liquid smoke, stirring occasionally to blend the flavors. Remove from heat, return the chicken to the pan, sprinkle with cheese and let stand for 3 minutes or until cheese has melted.
This dish is not very spicy, but you can adjust the jelly to your taste. Don’t be hesitate to try it. My husband loves spicy and my son does not, but this is one of their favorites.
