With Fall upon us, It is may favorite time to pull out the taste of Fall. This is one of our favorite Fall recipes.
Pumpkin Bread
4 eggs, beaten
3 cups Sugar
1 – 16oz can of Pumpkin
1 cup oil
1/3 cup water
1/2 teaspoon vanilla
3 1/2 cups all-purpose flour
1 1/2 teaspoon ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
Preheat oven at 350 degrees. Combine eggs and sugar in a large mixing bowl. Stir in pumpkin, oil, water and vanilla til blended. Stir together flour, cinnamon, salt and baking soda. Add to the pumpkin mixture, stirring til just combined. Pour mixture into four greased 7x2x3 inch baking pans or two greased 9x5x3 inch baking pans. Bake about 55 minutes for smaller loaves: about 65 minutes for larger loaves or until a toothpick inserted near the centers comes out clean. Cool bread 10 minutes on wire racks, loosen sides; remove from pans. Cool completely on wire racks. Wrap and store overnight before slicing.
